Chef Sam Ratchford's very first battle was back in 2009 in Blowing Rock, the birthplace of Competition Dining. Since then he has battle almost every year in pursuit of the Coveted Red Chef's Jacket. He has come close, very close, more than once but each time had victory snatched from his fingers. After taking a couple of seasons off, and with his new partner Julius Kalman (also a veteran CompDiningNC chef), Team Vidalia Boom entered the ring this year for one last attempt at taming the fire that is Competition Dining. Their battle line-up was not easy. First there was Team Los Tres Jefes consisting of Tim Bocholis of Bistro B in Kernersville, Mitchell Nicks formerly of Muse and Chef Dion Sprinkle of his namesake Lexington restaurant have there reputations of being Triad hotshots. Then, as if that wasn't challenging enough, enter Team Miller Time, the defending 2015 Winston Series champions with home turf advantage, consisting of Richard Miller of Graze in the Marriott along with his boss, Kevin Woods of Twin City Quarter and ex-sous Tim Gallione. Then top it all off with an ingredient like pheasant which is elegant in a normal restaurant scenario but difficult to keep moist when preparing for 120 judging diners. Miller Time held the lead throughout the night but Vidalia Boom stayed close. Of course, as in so many battles, the dessert turns out to be one of the most important courses of the night and Ratchford and his team pull off the win..."Finally" (Ratchford's quote).
